Fish fillets with cava sauce recipe

Ingredients to make Fish fillets with cava sauce:

  • 8 turbot fillets
  • 1 spring onion
  • 1 glass of fish brother
  • the white of 4 leeks
  • 2 garlic
  • 1 glass of cava
  • 1 lemon
  • flower
  • chopped parsley
  • olive oil
  • salted

How to make Fish fillets with cava sauce:

  1. Chop the spring onion very finely, cut the white of the leeks into slices and fry them all in a pan with oil.
  2. When it’s a little golden, add the cava and let it reduce a little.
  3. Then add the fish broth and let it reduce over low heat for 20 minutes.
  4. Then pass it through a potato mill.
  5. Season the fish fillets, flour them and fry them in a pan with oil and 2 unpeeled garlic cloves.
  6. Serve the sauce at the bottom of a bowl and the turbot fillets on top.
  7. Garnish with a lemon and chopped parsley.
