Fish Cream Recipe

Ingredients to make Fish Cream:

  • 1 kilogram of mixed fish
  • 150 grams of Prawns
  • 250 grams of Tomato
  • 500 milliliters of heavy cream (2½ cups)
  • 4 tablespoons of potato flakes
  • 1 unit of Onion
  • 2 cloves of garlic
  • 1 glass of white wine
  • 1 jet of oil
  • 1 pinch of saffron
  • 1 pinch of Parsley
  • 1 pinch of salt
  • 1 pinch of pepper
  • 2½ liters of water
  • Hard bread for croutons

How to make Fish Cream:

  1. Chop the onion and garlic and brown them in a pan with a little oil. Once golden, add the crushed tomato and let cook for a few minutes.
  2. We add the fish and the heads of the prawns to give a touch of flavor to the cream. Then, add the wine, saffron, salt and pepper to taste. Sauté for a few seconds and add the water.
  3. Let everything cook together for 20 minutes, until all the ingredients are cooked. After the time, remove the pan from the heat and strain the preparation.
  4. From the broth obtained, reserve a glass filled to the top and return the rest to the pot. In the glass we dissolve the potato flakes and add it to the pan. Leave it on the fire for 5 minutes, stirring from time to time. After this time, shredded the cooked fish and add it to the broth, we also add the prawn tails.
  5. Bring to a boil and remove from heat. When serving the fish cream, you can grind it to make it finer or leave it as it is, everything will depend on the personal taste of each one. We add milk cream and accompany it with fried bread and chopped parsley, delicious!
