Ingredients to make Dough to batter fish:
- fish strips (sole, monkfish, sea bream or fish fillets)
- 1/2 envelope Royal yeast
- 2 eggs
- salted
- 6 tablespoons of olive oil
- warm milk
- Pepper
- 275 gr. of flour
How to make Dough to batter fish:
- Conveniently mix the oil together with the egg yolks and milk.
- Gradually add the flour, mixed with the Royal yeast, until everything is well combined.
- Add the two egg whites, beaten until stiff, mix gently without beating and let stand for 1/2 hour.
- Cut the chosen fish, wash and sprinkle with lemon let it drain.
- Dip the fish in flour and batter and fry in a pan with plenty of very hot oil.
- Accompany with a good salad.
