Fish and prawn fumet recipe in Thermo mix

Ingredients to make fish and prawn stock in Thermo mix:

  • 200 grams of raw prawns (only heads and bodies)
  • 1 leek cut into pieces
  • 25 grams of olive oil
  • 800 grams of water
  • 150 grams of monkfish bone or any fish
  • 1 teaspoon salt
  • 2 sprigs of parsley

How to make fish and prawn stock in Thermo mix:

  1. Clean the prawns, peel and cut the leek.
  2. Add to the thermo mix the heads of the prawns, the leek and the olive oil.
  3. We put 3 minutes, 120 degrees, speed 3
  4. Add the rest of the ingredients, the water, the monkfish bones, the salt and the parsley. We put 8 minutes, 100 degrees, speed 2. Strain in a Chinese or fine strainer and reserve.
