Fine Clams in Cider Recipe.

Ingredients to make Fine Clams in La Sidra.:

  • For 4 people:
  • 1 kg. clam (fine)
  • 1 pc. spring onion (tender and large)
  • 2 units Garlic
  • 1 glass brandy
  • 1/2 bottle cider
  • 1 tablespoon flour
  • lemon rind
  • orange rind
  • 1 cinnamon stick
  • 1 glass liquid cream

How to make Fine Clams in La Sidra.:

  1. Sauté and brown the garlic cloves and spring onions in olive oil, add the flour and drizzle a little, add the clams, flambé them with brandy and drizzle with the cider, add the liquid cream and let the clams open, serve a once the clams have opened.
  2. And the sauce is bound.
