Fillets of sole stuffed with orange

Ingredients to make Fillets of sole stuffed with orange:

  • 1 kilo of boneless sole
  • 1/2 kilo of oranges

  • 1/2 kilo of prawns
  • 2 tablespoons of flour
  • 2 butter spoons
  • 1 tablespoon cornstarch
  • 3/4 of a liter of fish stock

How to make Fillets of sole stuffed with orange:

  1. Cook the spinach in a pot with water and salt. When they are tender, drain them and cut them very mushy. In a frying pan, melt three tablespoons of butter, taking care not to burn it, and sauté the spinach. Add the raw and peeled prawns until the whole is tender. Book.
  2. Meanwhile, prepare a fish stock with a liter of water, a monkfish head and the shrimp waste, an onion, a leek and a little salt. Let boil for about ten minutes. Prepare a thick béchamel with two tablespoons of butter and three tablespoons of flour and slowly add the strained fish stock.
  3. Add the hash, let it cool and put it on the sole fillets, rolling them up. Place in the clay pot greased with butter and with the remaining fish stock. Mix it with a little cornstarch and the juice of two oranges. Pour it on top and cook for 2 minutes.
