How to make Fig Leaf Malfuf (Hiabra):
Separate the vine leaves and place them with the rib facing up, leaving the leaf in such a way that the stem points towards the cook’s body and the tip of the leaf forward. Place the filling crosswise but without covering the entire width so that the sides can be folded towards the center and then wrapped on themselves, leaving small cylinders (approx. 7-8cm long) with the ends closed.
Place a base of vine leaves in a pot and place the malfuf on them one next to the other until the base is complete, then add another layer crosswise and so on. Once the layers are placed, we put a plate upside down covering the upper layer, and on the plate we place a weight (It can be a large cup with water, a piece of marble, etc.) to prevent the wrappers from rising. Add hot water with salt and lemon, watching that it penetrates under the plate until all the layers are covered. Once the water breaks the boil, lower the heat to a minimum and boil for forty-five minutes.
Remove them one by one, wetting your hands with cold water since the malfuf must be served very hot. Serve it with lemon and, if possible, with cold lavan.
