Ingredients to make Extremadura tomato soup:

  • 2 L-size tomatoes
  • 1 yellow or red bell pepper
  • 1 onion
  • 1 clove garlic
  • 1 pinch of pepper and salt
  • 3 glasses of water
  • 1 splash of extra virgin olive oil
  • 1 bay leaf

How to make Extremadura tomato soup:

  1. Peel the garlic and onion. Next, chop the onion into cubes and cut the garlic clove into three pieces. Save these ingredients for later. This rich soup always comes in handy in both summer and winter, but in the case of winter it will comfort us more due to its properties.
  2. Remove the skin from the tomato using a potato peeler. Another way to easily peel tomatoes is by blanching them for 30 seconds.
