Escarole and cod salad recipe

Escarole is a fresh lettuce rich in vitamins A, B and C. On the other hand, cod is a fish that combines very well in salads with other sweet products. we show you this escarole and cod salad that offers quick preparation and refreshing flavors.

Ingredients to make escarole and cod salad:

• 80 grams of desalted cod

• 150 grams of escarole

• 1 pinch of salt

• 1 jet of olive oil

• 2 units of Tangerine

• 30 grams of black olives

How to make escarole and cod salad:

We gather all the ingredients to make the escarole and cod salad. Place the escarole and cod in a salad bowl. For this recipe we have used escarole already washed, ready to eat, and desalted cod in crumbs.

Peel the tangerines and remove the skin from each segment with the help of a knife. Put the mandarins in the salad bowl. This fish can also be combined with other citrus fruits such as orange. Next, we add the whole olives to the escarole and cod salad.

Prepare a dressing with a teaspoon of Modena vinegar, two tablespoons of olive oil and a teaspoon of tangerine juice. You can also use citrus salad dressing.

Tip: In this salad it is not necessary to add salt, since the cod usually has a salty point.
