Escaldón de gofio or gofio escaldado is a typical dish from the Canary Islands that is simple, quick and cheap. The escaldón consists of a mixture of gofio (ground toasted cereals that can be made from millet, wheat or a mixture of cereals) and broth. The escaldón de gofio is usually served with a Canarian stew or to accompany a stew. It is a very hearty dish and, therefore, perfect for cold days. Usually in the recipe the meat or fish broth left over from the preparation of the stew, some stew or stew is used. If the broth is reused, pieces of vegetables from the same stew or cooked are also usually added. On top it is usually served with cut red onion and green coriander mojo.
Ingredients to make Escaldón de gofio vegetarian:
- 2 cups vegetable broth
- 5 tablespoons of gofio
- ½ onion
- 5 tablespoons green cilantro mojo sauce
How to make vegetarian gofio Escaldón:
- Pour the hot vegetable broth into a deep bowl.
- Gradually add the gofio, stirring vigorously with a fork so that no lumps form.
- Continue with the process until you obtain a homogeneous, creamy and thick mixture.
- Cut the onion into small pieces and serve the Canarian gofio escaldón.
- Add the chopped onion and the green mojo sauce on top of the vegetarian gofio escaldón.
