Entraña al Stroganoff Recipe

Ingredients to make Entraña al Stroganoff:

  1. 5 kg of beef entrails
  2. 250 cc of liquid cream
  3. 1 large onion
  4. 2 garlic cloves
  5. 500 grams of mushrooms
  6. Salt
  7. Pepper
  8. mustard or paprika

How to make Entrails Stroganoff:

  • Remove excess fat from the piece but not the skin that is adhered to it
  • Cut the meat into strips on a board following the line of the muscle fiber.
  • Fry the pieces of meat in a pot or casserole with very hot oil, turning it over with the help of a pair of tongs.
  • This stir-fry is just to seal it, it should be a short time to prevent it from overcooking and being tender, it should be red inside. Remove, season and reserve.
  • In the same casserole, to take advantage of the juices and the glaze that the meat has released and that sticks to the casserole, sauté the chopped onion until it is transparent, add the minced garlic and saute a little more.
  • Add the cleaned and sliced ​​mushrooms, letting the liquid they release evaporate.
