Endive recipe with salmon and cheese

To make an endive with smoked salmon, you only have to gather a few ingredients and in a very short time you will have an endive salad with salmon and spreadable cheese to share with your family, as a couple, at a meeting, or even by yourself if you feel like it. Because in addition to being easy to make, they are delicious and you can make endives stuffed with smoked salmon with many other ingredients that you like and combine well.

Ingredients to make Endives with salmon and cheese:

  • 2 endives
  • 200 grams of fresh cheese to spread
  • 100 grams of smoked salmon
  • 2 spring onions
  • 1 small bottle of Tápenas or capers
  • ½ Lemon
  • 1 bunch of fresh parsley
  • 1 piquillo pepper
  • 2 tablespoons of extra virgin olive oil

How to make Endives with salmon and cheese:

Before starting to prepare these endives with salmon and cheese, wash them well under cold tap water, drain them and separate the leaves one by one. It is important not to proceed to separate the leaves from the endives until we are going to prepare them for consumption to prevent them from darkening.

Next, squeeze the half lemon and strain the juice to remove any remaining pulp and seeds. And in a bowl we have the fresh cheese and the lemon juice and stir everything until there is a homogeneous paste. In another bowl we are throwing the smoked salmon cut into small pieces, the onions also chopped, the parsley, the piquillo pepper, the olive oil and the tápenas, and we remove all these ingredients from the endives stuffed with salmon so that they mix well. With a teaspoon we are putting fresh cheese on the endive leaves, and on top we spread two teaspoons of the salmon mixture to fill them. And that’s it! We already have our endive salad with salmon and cheese ready.
