Endive Cream Recipe

Ingredients to make cream of endives:

  • 2 units of endives
  • 1 unit of Onion
  • 2 cloves of garlic
  • 500 milliliters of vegetable broth
  • 2 units of Potatoes
  • 30 milliliters of olive oil
  • 1 pinch of salt
  • 1 pinch of pepper
  • 50 milliliters of heavy cream (¼ cup)

  2. In a pan, fry the onion and garlic, finely chopped, until soft.
  3. Add the endives cut into slices, you must remove the white part of the stems. Cook over low heat for 5 minutes, season with salt and pepper.
  4. It is time to add the vegetable broth with the potatoes, peeled and cut into small cubes. Cook over low heat for 20 minutes, after this time liquefy the cream of endives, until obtaining a completely homogeneous mixture.
