Ingredients to make squid enchilada:
• 2 pounds of clean squid without ink
• 5 cloves of garlic
• Half red bell pepper
• Half a medium onion
• 2 Chives (also use the green part)
• 1 tablespoon of salt
• 2 tablespoons of olive oil
• 1 can of tomato sauce
• 1/2 Cup of dry wine
• 1 teaspoon of vinegar
• 3 tablespoons of Chinese sauce
• 1 cup of water
How to make Calamari Enchilada:
Cut the squid into slices one inch thick, grind the sauce made up of garlic, onion, chili and chives, add the salt and stir everything until the ingredients are well mixed. Add the tomato sauce, the dry wine and the vinegar, mix again and add the water and the Chinese sauce last. It is cooked in a pressure cooker to ensure that the squid is soft. Cover the pot and leave with pressure for 15 minutes. Uncover the pot and put it over low heat until the sauce thickens with the squid, when it is very thick, remove it and ready to eat. It is very rich with white rice and vegetable salad. It can also be served with crackers or toasted bread as an appetizer.
