Ingredients to make Emperor with onions:
- 1 kilo of emperor, in fine fillets.
- 2 large onions.
- 1 plate of flour.
- 1 glass of water.
- 1 glass of white wine.
- 2 deciliters of olive oil.

How to make Emperor with onions:
- Wash the fillets well and salt.
- Flour both sides and fry in a pan with hot oil.
- Once the fillets are browned, set aside and reserve.
- Cut the onion into julienne strips (thin strips).
- In the same pan where we have fried the fish, we remove most of the oil and fry the onions until they become transparent.
- Then we add the glass of wine and the glass of water and let it cook until the onion is soft and the cooking liquid evaporates.
- Place the fried emperor fillets in a low casserole and distribute the cooked onion on top.
- We bring the fish to a boil and serve immediately since if it is overcooked, the fish can dry out.
- We serve hot in a fountain.
