Ingredients to make Emblanco (fish soup):

  • For 4 people:
  • 400 grams of clean monkfish.
  • 50 grams of onion.
  • 50 grams of green pepper.
  • 12 cloves of garlic.
  • 1 deciliter of olive oil.
  • 1 liter of water
  • 1 liter lemon.

How to make Emblanco (fish soup):

  1. Put the water, the oil, the green pepper, the tomato, the onion, the garlic and the chopped potatoes into small cubes (brounoisse) in a saucepan.
  2. When the potatoes are cooked, season with salt and lemon juice (when you add the lemon, you add the white broth, hence its name) and add the clean and chopped fish.
  3. It is advisable not to let it boil for a long time so that the fish does not harden.
  4. We rectify the point of salt and serve hot.
  5. If we want, we serve the dish sprinkled with a little chopped parsley at the very moment of serving.
