Elbow soup with vegetables recipe

Ingredients to make elbow soup with vegetables:

  • 200 grams of elbow pasta
  • 1½ liters of water
  • salt to taste
  • 1 splash of oil
  • 2 carrots
  • 1 potato
  • 1 large or two small zucchini
  • 1 chicken bouillon cube
  • 1 sprig of coriander
  • 2 tomatoes
  • 1 piece of onion
  • 1 clove garlic

How to make elbow soup with vegetables:

  1. Start the elbow soup with vegetables recipe by peeling and chopping the vegetables. To do this, peel the carrot and cut into small cubes, do the same with the potato. Next, remove the ends of the zucchini and also chop into small cubes. Then reserve.
  2. Blend the tomatoes, the piece of onion, the garlic clove and a cup and a half of water or chicken broth. Blend for a minimum of 3 minutes and then set aside.
  3. Heat a splash of oil in a saucepan and, when hot, empty the elbow pasta and the carrot, cook until the carrot is browned and the pasta has taken on an almost golden amber color. Keep at a medium low temperature and move constantly so that it does not burn.
  4. Pour the previously blended tomato sauce, passing through a strainer first, and mix well. Then, add the chicken bouillon cube, the potato and the chopped zucchini, cook everything for about 3-5 minutes so that it begins to season.
  5. Pour 1-1.5 liters of water or chicken broth. Next, also add a sprig of coriander, salt and pepper to taste and let it cook over low heat. When it starts to boil, check the flavor and, if you think it is necessary, add a little more salt to taste.
  6. When it starts to boil, leave only 5 more minutes and it will be ready to serve. Let the elbow soup with vegetables cool slightly and add a touch of lemon. Ready to eat!
  7. Other vegetables to incorporate into pasta soup
  8. In addition to the vegetables that we share in this recipe, you can add more, such as: cabbage, shredded cabbage, diced chayote, diced tomato, green beans, shelled corn or chunks on the cob. You can also add fresh cheese, sour cream and finely chopped onion. On the other hand, if you wish, you can also add spice and use marinated chipotle chili and add at the time of blending or, you can even add a touch of the marinade at the time of serving.
