Eggs in green sauce recipe

Ingredients to make Eggs in green sauce:

  • 6 eggs
  • 1 vegetable broth tablet
  • 1 sprig of fresh parsley
  • 1 glass of white wine
  • 1 dessert spoon of cornmeal or cornstarch
  • 1 medium spring onion
  • 1 pinch of ground pepper
  • 1 pinch of salt
  • 1 splash of olive oil
  • 3 garlic cloves
  • 200 milliliters of water or vegetable broth
  • 1 pinch of ground turmeric

How to make Eggs in Green Sauce:

  1. Boil the eggs until fully cooked. Normally, the cooking time is 12 minutes from the first boil. Once boiled, put them in cold water to peel them better.
  2. Trick: Add a dash of vinegar and a pinch of salt to the water. Vinegar is great to avoid that, if an egg is cracked in the water, it does not end up spreading and curdling quickly.
  3. Chop the onion into very small pieces and the garlic into slices.
  4.  Prepare a saucepan, pour oil and wait for it to get hot enough to poach the garlic and chopped onion.
  5. Keep them until you see that it begins to take on a golden color and do not forget to stir.
  6. Dilute a spoon full of corn flour in the wine, this will give our sauce a slight consistency but without making it too pasty.

  8. Pour the flour diluted in the wine in the pot; add a light pinch of salt to enhance the flavor of the sauce.

  12. Pour the water and let the sauce cook over medium-low heat. If you want the broth to be more abundant, add more water.
