Eggplant Crostini Recipe

The crostini is an appetizer of Italian origin, it consists of a slice of toasted bread with some ingredient on top, and in this case we will prepare an aubergine and cream cheese crostini. A perfect vegetarian appetizer to share at a gathering.

Ingredients to make Eggplant Crostini:

  • 6 units of Toasted bread
  • 1 unit of Eggplant
  • 150 grams of cream cheese
  • 10 grams of chives
  • 30 milliliters of olive oil
  • 1 pinch of salt
  • 1 pinch of pepper

How to make Eggplant Crostini:

1 Before making this recipe, the first step is to get all the ingredients ready.

2 In a frying pan with oil, arrange the aubergine slices and cook on both sides until golden brown, season with salt and pepper

3 Mix the cream cheese with the finely chopped chives, salt and pepper.

4 Spread the toasted baguette slices very well with the cream cheese and chives.

5 Arrange the aubergine slices on the toast, serve and enjoy the aubergine crostini. If you are preparing gourmet appetizers you can include some surimi toasts and other vegan avocado toasts.
