• Montego or Idiazabal cheese

How to make warm eel salad:
Wash the lettuce well and cut it into normal size and place it in a bowl or salad plate. We add the anchovies (which are not very salty) in quantities to the taste of the chef – not less than five – cut into not very small pieces. Add the cheese cut into small cubes.
We add the pâté, which, we will have taken it out of the fridge instantly so that it stays hard and we make it small cubes, just like the cheese.
