Eel and Salmon Salad Recipe

Ingredients to make Eel and Salmon Salad:

• 250 grams eels

• 200 grams smoked salmon

• Lettuce (of various types)

• Avocado

• Tomatoes

• Olive oil

• 1 garlic clove

• Vinegar

• Parsley

• Chive

• Salt and pepper

• Chili oil

How to make Eel and Salmon Salad:

Finely chop the salmon and season with a little squeezed lemon and pepper. Mix the avocado and tomato, peeled and cut into small cubes. Add the chopped chives. In a bowl put the olive oil, minced garlic and a few drops of lemon juice. Add the eels and mix well.

To make the parsley oil: Separate some parsley leaves and put them in a saucepan with boiling water and when it comes to a boil again. We remove them and cool them in water. Drain well and grind with olive oil and salt. Season the lettuce with oil, vinegar, salt and pepper.

To present the dish, a ring is placed in the center and at the bottom, the salmon, on top of the lettuce and on top of it, the eels. Remove the ring and surround the salad with parsley oil, diced tomato, chervil, etc. It can be served with a little chili oil.

Note: You have to be careful not to go overboard with the oil, since both salmon and eels are very fatty.
