Ecuadorian Green Rice Recipe

Ingredients to make Ecuadorian Green Rice:

  • 1 lb. of rice
  • 4 cups of water
  • 4 green chilies
  • 2 ounces of margarine
  • 2 teaspoons of chicken broth
  • salt to taste
  • 1 clove garlic
  • onion (optional)

How to make Ecuadorian Green Rice:

  1. Blend chills, garlic and water.
  2. In the hot margarine, fry the rice, then add the broth, the bouillon and the salt.
  3. Let it come to a boil and cover.
  4. Cook over low heat for 30 minutes or until rice has puffed up.
