Ecuadorian Chicken Sancocho Recipe

Ingredients to make Ecuadorian Chicken Sancocho:

  • 1 large hen in prey (remove excess fat and wash with lemon)
  • 3 kilo of assorted vegetables
  • 3 young jojotos, chopped into pieces
  • 2 leeks (white part and some of the green)
  • 2 onions cut in two
  • 1/2 Cup of parsley and chopped cilantro to decorate

How to make Ecuadorian Chicken Sancocho:

  1. In a large pot, cook the chicken for 60 minutes, accompanied by the onion chopped in two, the leeks, the garlic cloves, a pinch of salt and a few grains of pepper.
  2. Take out the prey, strain the broth.
  3. Place the chicken, vegetables and chopped green beans back in the pot, add 4 cloves of crushed garlic, salt and pepper to taste.
  4. Cook until vegetables soften
