Easy Vegetable Empanada Recipe

Ingredients to make easy Vegetable Empanada:

  • Filling
  • 1 unit of Onion
  • 2 units of pepper
  • 2 units of Egg
  • 1 unit of Zucchini
  • 1 cup of cheese
  • 1 pinch of salt
  • 1 pinch of oregano
  • Dough
  • 1 cup of flour (140 grams)
  • ½ glass of White Wine
  • ½ glass of oil
  • 1 pinch of salt

How to make easy Vegetable Empanada:

1 We make the dough by mixing the oil and the wine, with a pinch of salt and adding the flour until the dough is compact but smooth. Let stand 15 minutes, it will be ready. Add flour until you get the desired consistency, it can be more or less than a cup.

2 For the filling, put oil in a frying pan and put all the chopped vegetables, add a little salt and do not stop turning until they are soft. We take them out and put them in a colander so that they leave all the broth for about 10 minutes, we put it in a bowl and add a beaten egg, the cheese, the oregano and adjust the salt, we reserve it.

3 Cut the dough into two pieces, roll it thin and put it in the mold, put the filling, cover it with the other piece, paint it with the other beaten egg and put it in the oven at 170ºC for 30 minutes, until golden brown. Remove from the oven, let cool and unmold.
