Ingredients to make Easy Shrimp Broth:
- 1 kilogram of fresh shrimp
- 2 pieces of Chiles pasilla without veins or seeds
- 2 pieces of Guajillo Chiles without veins or seeds
- ¼ piece of chopped small onion
- 2 pieces of Chopped guaje tomatoes
- 1 clove garlic
- 2 tablespoons of vegetable oil
- 2 pieces of Carrots in medium cubes
- 2 pieces of Potatoes in medium cubes
- 1 unit of celery stalk cut into half moons
- 1½ cups of Water (360 milliliters)
- 1 branch of Epazote
- 1 pinch of salt to taste
How to make Easy Shrimp Broth:
- We start with the elaboration of the shrimp broth. To do this, soak the two types of chilies in warm water for 5 minutes. After this time, blend with the onion, tomato and peeled garlic cloves.
- Strain the smoothie and reserve it. Heat the oil in a saucepan over medium heat and, once hot, fry the peeled and chopped carrots and potatoes. Add the chopped celery, sauté and add the previous chili puree. Cook everything together until thick.
- When it thickens, we pour the water. As soon as it starts to boil, reduce the heat, add the shrimp without the heads and the epazote, let the broth cook for 10 minutes and add salt to taste.
- We serve the shrimp broth hot and accompanied by avocado and lemon. And as a second course, you can prepare some tacos al pastor.
