Ingredients to make easy Rice with lobster:
- ½ onion unit
- 1 clove garlic
- 1 bunch of Parsley
- ½ kilogram of Clams
- 1 kilogram of rice
- 1 pinch of Saffron or food coloring
- 1 kilogram of lobster
- 1½ kilograms of cockles
- 1 jet of Oil
How to make Easy Rice with Lobster:
- The first step to prepare rice with lobster is to cook the cockles and clams. Do it in the traditional way with boiling water and set aside 4 cups of water from this cooking. Mix the broth with the saffron or coloring and reserve.
- Put the oil in a clay pot and brown the onion with the garlic and parsley, all finely chopped. Quantities can vary to taste.
- When the onion begins to brown, add the rice and mix well with the sauce. Once stirred, add the water from cooking the clams and cockles.
- Next, add the chopped lobster and cook over low heat like normal rice. Check that the lobster is done and leave the rice with more or less broth according to your taste.
- The rice with lobster is served hot and you can present it in the same casserole in which it was cooked. You can decorate with lemon wedges and fresh parsley.
