Easy Pumpkin Pie Recipe

Ingredients to make Easy Pumpkin Pie:

  • 150 grams of ground or chopped cookies
  • 80 grams of butter
  • 1 dessert spoon of cinnamon
  • 1 tablespoon ginger dessert (optional)
  • For the filling
  • 500 grams of cooked pumpkin
  • 100 grams of sugar (½ cup)
  • 200 milliliters of cream or milk cream
  • 3 eggs
  • 1 dessert spoon of cinnamon

How to make Easy Pumpkin Pie:

  1. To start with the easy pumpkin pie, first cook the pumpkin, peel and clean well to remove the seeds. Next, cut into pieces and add to a bowl covered with plastic wrap, microwave for 8-10 minutes at maximum power until cooked.
  2. Then, mash with a fork or shred if desired. Let it cool down.
  3. On the other hand, prepare the base of the cake.
  4. To do this, crush the cookies, add them to a bowl with the melted butter, cinnamon and a little ginger, mix well until the two ingredients are well integrated.
  5. Cover the base with the cookie dough in a mold about 20-22 cm wide. Next, with a spoon or the bottom of a glass, crush the dough well so that it is very compact.
  6. Then, turn on the oven at 180 ºC, put in the oven for about 5-8 minutes with the cookie base. After this time, withdraw.
  7. Prepare the pumpkin cream. To do this, in a bowl add the three eggs with the sugar and beat a little. Then, we will go to the mixer, now just mix.
  8. Add the cream, mix and, followed by, add the cooked and pureed pumpkin, also add a pinch of cinnamon. Mix everything well.
  9. If you don’t like to find the threads of the pumpkin, it will be better to crush the cream, it will be finer.
  10. Add the cream on the biscuit base, put it in the oven, specifically in the middle with heat up and down at 180ºC. Make sure the top of the cake doesn’t burn.
  11. When about 20 minutes have passed, poke a toothpick in the center and, if the toothpick comes out dry, the pumpkin pie will be there.
  12. On the contrary, leave it a little longer, it will take about 30 minutes depending on the oven. When ready, let cool and, when serving, sprinkle with a little ground cinnamon.
