I learned this potato recipe in a small town in La Rioja, Lumbers, in the heart of Camaros. It is one of the most traditional dishes of Spanish cuisine, as well as being simple and tasty. It is ideal to combat low temperatures during the cold months, as it is served very hot and offers us a whole variety of textures and flavors. Stay and learn how to cook these Rejoin potatoes in an easy way.

Ingredients to make easy rejoin Potatoes:

  • 400 grams of Potatoes
  • 200 grams of red Chorizo (from Extremadura)
  • 1 unit of Onion (not very large)
  • 4 cloves of garlic
  • 3 bay leaves
  • 2 units of red peppers (choric Eros)
  • 1 tablespoon paprika
  • Water

How to make easy Rejoin Potatoes:

  1. Peel and chop the potatoes irregularly. To make the authentic recipe, we must make a cut in the potato and break it, so we get irregularly broken potatoes.
  2. Chop the onion and garlic into small pieces. Then, we take a deep frying pan and heat oil to fry these ingredients. When hot, add the onion and garlic and cook until soft (caramelized).
  3. Add the bay leaf, paprika, chorizo and potatoes and let sauté for 3 minutes. Then, add the peppers previously cut into pieces and crushed in the mortar with a teaspoon of salt.
  4. We continue frying for a few more minutes. Finally, pour water to cover all the ingredients, or a little more if necessary. Let cook for 5 minutes over high heat, and then lower to slow and keep it until the potatoes are cooked (approximately 10 minutes more).
  5. When they are ready, we serve the Rejoin potatoes hot. And second, we can prepare a sirloin baked or in sauce.
