Easy Fried Chickpeas with Potatoes and Eggs Recipe

Ingredients to make easy Fried Chickpeas with Potatoes and Eggs:

  • 400 g of chickpeas
  • 2 small potatoes
  • 1 onion
  • 4 eggs
  • Oil
  • Salt
  • Chopped parsley

How to make Easy Fried Chickpeas with Potatoes and Eggs:

1 Cook the chickpeas that we have had to soak since the day before in salted water until they soften.

2 Peel and chop the potatoes into thin slices.

3 Chop the onion and brown it in oil.

4 When it is golden, add the potatoes, add salt and fry for 15 minutes.

5 When the potatoes are done, remove them to a plate and in the same pan fry the chickpeas for 4-5 minutes.

6 On a large plate, place the chickpeas and the fries on top.

7 At the last moment, fry the eggs, place them on top of the potatoes and sprinkle with parsley.
