Easy Coconut Rice Recipe

Ingredients to make Easy Coconut Rice:

  • 3 cups of coconut milk
  • 2 cups of white rice
  • 1 teaspoon salt
  • 2 tablespoons of Sugar
  • 50 grams of raisins
  • 2 cups of Water (480 milliliters)
  • 1 cup of Coke

How to make Easy Coconut Rice:

  1. Add the coconut milk to a deep saucepan and bring to a boil over high heat.
  2. When it starts to boil, lower the flame and stir constantly for about 45 minutes until the liquid evaporates and the solid coconut takes on a slightly dark color, like caramel, which is what we call titote.
  3. Add the rice to the saucepan along with the salt, sugar and raisins.
  4. Stir well so that all the ingredients are mixed with the rice.
  5. Finally, add the water along with the Coca-Cola, stir and let the liquid reduce a little over high heat.
  6. So, cover the pot and lower the heat to a simmer to finish cooking the rice for about 15-20 minutes.
  7. Serve immediately and enjoy this delicious coconut rice with titote.
