Easy Biscay style cod recipe

This time I propose an easy and tasty Biscay cod, a traditional cod recipe from Basque cuisine. This Biscayan cod recipe has as its main ingredient the use of chorizo ​​​​pepper, although as in all typical recipes it has its variants, and in each house it is given its touch or depending on which areas it is made in one way or another.

Ingredients to make easy Biscayne cod:

  • 4 pieces of salted cod
  • 4 garlic cloves
  • 2 onion
  • 1 tablespoon of chorizo ​​pepper or 5 dried peppers
  • 250 grams of crushed tomato
  • 2 tablespoons of flour
  • 1 glass of olive oil
  • 1 pinch of salt

How to make easy Biscayne code:

  1. We prepare the ingredients to prepare the traditional Biscayan cod recipe. Cut the garlic into slices and the onions into julienne strips. Remove the seeds and the tail of the chorizo ​​peppers and soak them for 10 minutes in warm water.
  2. Trick: You can also buy the meat of the chorizo ​​​​pepper in jars already prepared.
  3. Put a saucepan over low heat, add the glass of oil and add the sliced ​​garlic. We leave them for a couple of minutes to comfit. Dip the cod pieces in flour (this is optional, you can add the cod pieces without flouring them), put them in the casserole and let them cook over a very low heat for 2-3 minutes on each side. Remove the code and reserve.
  4. Tip: To desalt cod, leave it in water for two days and change it every 8 hours.
  5. Add the onion and cook over medium heat for about 15 minutes, until it is well poached.
  6. When the onion is ready, add the fried tomato and the meat of the chorizo ​​​​peppers. Stir and let cook for about 15 minutes.
  7. Tip: If the cod stir-fry sticks follow the traditional Biscayan style, you can add a little water.
  8. When the vegetables are well poached, blend the Biscayan sauce and put it back in the casserole.
  9. Add the fish and let the cod cook Basque style for 5-8 minutes depending on its thickness. We rectify salt if necessary.
  10. And ready to eat! When the fish is done, we can enjoy an easy freshly made Biscay cod to lick your fingers.
