Ingredients to make easy and delicious Chickpeas with American sauce:

  • 1 can of cooked chickpeas (400 g)
  • 1 onion
  • 400 grams of tomato
  • 2 cloves of garlic
  • 1 teaspoon smoked paprika
  • 1 glass of cognac
  • 400 milliliters of fish broth
  • 1 glass of white wine
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 splash of extra virgin olive oil

How to make easy and delicious Chickpeas with American sauce:

1 Drain the chickpeas and wash them well under the tap to remove the remains of the liquid that preserves them. We let drain. Although they are already cooked, on many occasions they are a bit hard so for this recipe we put them in a saucepan, cover them with water, add a splash of wine and put them on the fire until the water evaporates.

2 We prepare the sauce, so we peel the onion and cut it into brunoises (small squares). Peel the garlic and cut it into fine slices to continue with the recipe for chickpeas with American sauce.

3 Sauté the garlic in a pan with hot olive oil. Remove frequently so they don’t burn and add the onion. We are poaching both ingredients.

4 Peel the tomatoes, cut them and add them to the pan along with the fish stock, the wine and the cognac. Stir well and let cook until the juices evaporate and take consistency of sauce.

5 When it has almost completely reduced, add smoked paprika, pepper and adjust salt. Cook the tomato and onion sauce for a few more minutes.

Trick: If we want, we can give it a spicy touch by adding chili or Tabasco, even ground cayenne.

6 Add the chickpeas and a splash more of wine, mix well and let cook until the liquid has evaporated.

7 We serve the chickpeas with American sauce accompanied by bread, and enjoy! You can also prepare a salad to accompany, with lettuce and orange, for example, or some baked potatoes.
