Duck Fideua recipe

Duck fideuá is an unconventional dish with which you will surprise your family and friends. It is a very good and different dish, since the duck gives it a lot of flavor and combines very well with the mushrooms.

Duck is a meat that is consumed mainly for parties or to prepare sophisticated dishes, but many simple and rich dishes can be made with this ingredient throughout the year. For this dish I bought a confit duck leg, which is already sold like this and it is very good. The fat it contains is used to cook the dish, thus leaving all its flavor. You can also use other parts of the duck or cook it yourself at home. Likewise, if you have any food left over, you can make this dish with those leftovers. To know all the details, stay and discover with us how to make duck fideuá.

Ingredients to make Duck Fideua:

  • 1 duck thigh confit
  • 250 grams of mixed mushrooms (can be frozen)
  • 2 garlic cloves
  • 150 grams of crushed or fried tomato
  • 1 liter of chicken or vegetable broth
  • 350 grams of nº2 noodles
  • 1 pinch dried or fresh thyme
  • 1 dessert spoon of sweet paprika
  • 1 splash of olive oil

How to make Duck Fideua:

  1. In the casserole where you are going to prepare the duck fideuá, put a teaspoon of olive oil and sauté the noodles over medium heat, just so that they take on a little color.
  2. Take them out and reserve them.
  3. In the same casserole, add the duck fat that comes in the package if you buy it already made, or the juice that it has released if you have cooked it at home.
  4. When hot, sauté the mushrooms.
  5. Tip:if the mushrooms are frozen, you should let them thaw and dry them well so they don’t release too much water. 
  6. If they are fresh, clean them and chop them up.
  7. Once the mushrooms are sautéed, add the chopped garlic, mix and add the tomato.
  8. Stir everything and let cook for a few minutes.
  9. Add a little thymeand a teaspoon of sweet paprika and mix well to integrate these spices.
  10. Add the noodlesand cook everything for a couple of minutes.
  11. Pour in the hot brothso that everything is well covered.
  12. For this duck fideuá you will need 1 or 1.5 liters.
  13. Separately, remove the meat from the thigh in strips or pieces, remove the skin and place the pieces on top of the fideuá. Taste for salt and if necessary add a little.
  14. Let everything cook for about 15-20 minutesor until the noodle is dry.
  15. For the noodles to rise and the fideuá to be perfect, it is important that they dry out a bit.
  16. When the fideuá is ready, turn off the heat and let it rest for 5 minutes, since the noodles will stand up during this time.
  17. Serve this delicious duck and mushroom fideuá recipeimmediately to enjoy it hot.
