Ingredients to make brandy drunk octopus:
- 2 kilos of octopus
- 1/3 cup of brandy
- 1 kilo of roasted tomato, peeled, chopped and without seeds
- 3 tablespoons olive oil
- 3 tablespoons of sunflower oil
- 4 garlic cloves, minced
- 1 chopped onion
- 1 cup of red wine
- Salt
- pepper the necessary
- 2 tablespoons chopped parsley
- jalapeno pepper slices
- olives
- capers to taste
How to make brandy drunk octopus:
- At the fishmonger, ask them to clean your octopus.
- At home beat it a little to soften the meat.
- Wash it very well and put it to marinate with brandy and some salt.
- Then put it 3 times in boiling water.
- Cook the octopus in the same brandy and water (for faster use in a pressure cooker), keep the water where it was cooked and cut the octopus into pieces.
- Heat the oils and brown the garlic with the onion, add the chopped tomato and cook until they change color, stirring occasionally, add the octopus in pieces, a little of the cooking water and red wine; salt, pepper and cook until the sauce thickens.
- To serve add jalapeño slices, olives, and sprinkle with chopped parsley.
- SERVE WITH WHITE RICE.
