Dough Recipe for gyozas

The popular Japanese gyozas are made with a simple dumpling dough, as they are an adaptation of traditional Chinese dumplings. For this reason, this same dough that we show in this article can be used to make Japanese dumplings, jiaozis, wonton, etc.

Making homemade gyozas is much easier than you think, since the dough is simply made with flour and water. The really complicated thing is to form the gyozas with the folds that characterize them so much, but with practice everything is possible! Ingredients to make Dough for gyozas:

• 200 grams of wheat flour

• 90 milliliters of hot water

• 1 pinch of salt

How to make dough for gyozas:

Sift the flour and mix it with the salt. To make the homemade gyoza dough we have used multipurpose wheat flour. Gradually add the hot water and mix with a spoon, spatula or fork using circular movements. It is not necessary to boil the water, heating it for a minute in the microwave is enough?

When you can, knead with your hands, remove the dough from the bowl and work it on the table having previously spread a little flour. We recommend kneading for 5-10 minutes, or until you notice that the gyoza dough is completely homogeneous and smooth.

Form a ball, cover it with plastic wrap and leave it in the fridge for 2-3 hours or overnight. If you don’t have that much time, you can leave it in the freezer for 30 minutes.

After the time, knead for 1 minute and divide the dough into two equal parts. Take one of them and form a cylinder approximately two hands long. Then, cut about 12-14 equal pieces, depending on how long you have left, they will come out more or less. Do the same with the other half of the dough. Take a piece, sprinkle a little flour on top, flatten it first with the palm of your hand and then with the rolling pin to obtain a thin circle. For your homemade gyozas to be perfect, you should leave the center a bit thicker and the rest quite thin. Repeat this step with all the pieces.

When you have all the circles ready, you can use them to make your gyozas. You can fill the gyoza dough with whatever you like.

Ways to cook the dough for gyozas

After preparing the gyoza dough recipe and forming your homemade gyozas, it is time to cook them. To do this, you have several options: steamed, in the pan or in a pot with boiling water.

Steamed

Simply cook the homemade gyozas in a steamer or strainer placed in a pot of boiling water. The time will depend on the size of your gyozas, but they usually take about 15-20 minutes.

Boiled

It’s as simple as putting a pot of water to boil and, once it reaches the boiling point, add your homemade gyozas and wait for them to be well done.

In pan

This will probably be the easiest way. You should put a deep frying pan on the fire with a splash of oil. When it’s hot, place the homemade gyozas and let the base brown. Once you see that they are golden on the bottom, pour a glass of water, cover the pan and let them cook until the water evaporates completely.

Using this method, the gyoza dough is cooked with the boiling water and the very steam it generates. Once ready, you only have to serve them accompanied by soy sauce or teriyaki sauce.
