Doradas Fernando recipe

Ingredients to make Doradas Fernando:

  • 8 small breams
  • 6 garlic cloves
  • pretty parsley
  • salted
  • extra virgin olive oil
  • Coloring
  • fine sherry wine

How to make Doradas Fernando:

  1. Clean them golden; remove the scales, salt and reserve.
  2. Crush the garlic and parsley in a mortar.
  3. In a pan that just fits the golden ones, put the oil and fry the garlic and parsley until it is about to burn.
  4. Add the coloring and the fine sherry just until the bottom of the pan is covered. Add the sea breams and cover.
  5. Leave the pan over low heat for 5 minutes, stirring it several times in a smooth circular motion.
  6. Turn the sea breams over, cover and repeat the operation for 3 minutes.
