Ingredients to make Doradas Fernando:
- 8 small breams
- 6 garlic cloves
- pretty parsley
- salted
- extra virgin olive oil
- Coloring
- fine sherry wine
How to make Doradas Fernando:
- Clean them golden; remove the scales, salt and reserve.
- Crush the garlic and parsley in a mortar.
- In a pan that just fits the golden ones, put the oil and fry the garlic and parsley until it is about to burn.
- Add the coloring and the fine sherry just until the bottom of the pan is covered. Add the sea breams and cover.
- Leave the pan over low heat for 5 minutes, stirring it several times in a smooth circular motion.
- Turn the sea breams over, cover and repeat the operation for 3 minutes.
