Dorada recipe with zucchini in orange sauce

Ingredients to make Dorada with zucchini in orange sauce:

  • 1 large sea bream (1.5 to 2 kg.)
  • 1 zucchini
  • 3 medium oranges
  • 1 onion
  • 2 garlic cloves
  • 1 tablespoon of flour
  • olive oil
  • salted

How to make Dorada with zucchini in orange sauce:

  1. Remove the loins of the sea bream.
  2. Cut the zucchini lengthwise into as thin slices as possible (a potato peeler works very well to do this) and wrap the sea bream fillets with them.
  3. Place them on a greased baking sheet with olive oil, season them with salt and pepper and water with the juice of an orange and a drizzle of oil.
  4. Put them in a medium oven (170-180º C.) already preheated, until they are tender and juicy (20-30 min. depending on the size).
  5. In a frying pan, put the finely chopped onion and garlic, with a little olive oil and salt over a very low heat, until they are well browned.
  6. Add a tablespoon of flour and fry it.
  7. Water with the juice of 2 oranges and move until everything is well combined and the sauce is reduced, which should be very fine without the need to pass it through a Chinese mill or potato mill.
  8. Put a spoonful of sauce on the plate and place the sea bream on top.
  9. Cover with the willow.
