Dorada recipe with anchovy vinaigrette

Ingredients to make Dorada with anchovy vinaigrette:

  • 1 sea bream of 1 kg
  • 5 anchovy fillets
  • 1 onion
  • salted
  • 2 bay leaves
  • 1 sprig of parsley
  • oil
  • juice 1 lemon
  • 2 tablespoons of wine vinegar
  • for the garnish
  • anchovy fillets
  • parsley leaves

How to make Dorada with anchovy vinaigrette:

  1. Clean the fish well, removing the scales and entrails; wash it and dry it with a kitchen towel. Finely chop the anchovies, put them in a bowl, water them with the vinegar and lemon juice and mix well. Pour without stopping stirring, 1 glass of oil; salt it, add the parsley and onion, both peeled and finely chopped.
  2. Place the sea bream in a baking dish, cover it with the previous sauce and place the bay leaves on top
  3. Put it in the oven and cook it for about 20 minutes, until it is done. Transfer the sea bream to a serving dish, cover it with the sauce and serve it garnished with the anchovy fillets and the parsley leaves.
