Dona Pepa Nougat Recipe

The doña pepa nougat is a Peruvian dessert that is consumed especially in October and is considered cultural heritage in Peru. And why is it consumed especially in the month of October? Well, the story began when a lady named Josefa Marmanillo who lived in Cañete used to prepare this dessert. Unfortunately, the lady began to feel loss of mobility in her arms and could no longer cook for herself. Doña Josefa visited the church where the Lord of Miracles is located and asked him to cure her. The miracle was granted and as a thank you she took her famous nougat to the church, and that is how she little by little became a character and in this way said doña pepa nougat began to gain popularity.

Ingredients to make Dona Pepa Nougat:

  • 10 grams of anise
  • 180 milliliters of water (¾ cup)
  • 2 drops of yellow food coloring
  • 340 grams of vegetable shortening
  • 720 grams of unprepared flour
  • 8 grams of baking powder
  • 12 grams of salt
  • 4 grams of baking soda
  • 8 egg yolks
  • 1 dash of vanilla essence
  • 2 apples of water
  • 1 medium quince
  • 1 cinnamon stick
  • 1½ chancaca or panela
  • 1 orange
  • 500 grams of white sugar
  • 60 grams of glucose
  • 50 grams of tablets
  • 1 pineapple peel
  • ½ pineapple

How to make Dona Pepa Nougat:

  1. To start with the doña pepa nougat recipe, you must first cut the pineapple into medium pieces and the orange into slices.
  2. In addition, also cut the apples and remove the seeds.
  3. In a medium saucepan, place the pineapple, the pineapple peel, the water apples, the orange, the cinnamon, and the quince.
  4. Add water to cover and bring to medium heat for approximately 30 minutes.
  5. After 30 minutes, with the help of a strainer, remove the fruits and reserve the liquid.
  6. Cut the chances into small pieces and add it to a medium pot with half a cup of water.

  13. Refrigerate the dough for about 1 hour, covering it with plastic wrap.
  14. When an hour has passed, divide the dough and form a churro with your hands.
  15. Cut the churros and place them in a sip at or a container. The oven should be at 180 ºC for approximately 18-20 minutes.
  16. When the toothpicks are ready, bathe them with honey. You must place them horizontally.
