Dominican Christmas Rice Recipe

  • 1 cup of rice
  • 1 onion
  • 1 paprika
  • 1 carrot
  • 2 branches of leek
  • 200 grams of bacon, ham or chop
  • 70 grams of mushrooms
  • 1 teaspoon garlic paste or minced garlic
  • 1 teaspoon of oregano
  • 1 cup of shelled corn
  • 1 teaspoon salt
  • 1 teaspoon of pepper
  • 3 tablespoons of oil or butter
  • 1 cup of chopped raisins
  • 1 cup of peanut or groundnut, or chopped almonds

How to make Dominican Christmas Rice:

  1. To start with this Christmas rice recipe, cut the onion, leek, paprika and carrot into small squares.
  2. In the pot add a tablespoon of oil and toast the uncooked rice after washing it for 5 minutes. Reserve it in a bowl.
  3. Add a tablespoon of oil in the pot and add the onion and carrot, fry for 10 minutes stirring constantly.
  4. If you have whole mushrooms, fillet them, and cut the ham into small pieces.
  5. In a frying pan with a tablespoon of oil, sauté the mushrooms together with the ham and the garlic, stirring from time to time.
  6. Sauté for 10 minutes or until mushrooms are soft. If you used chop you can grate it and remember to season it in this step.
  7. Add this sauce and the rice to the onion with carrot, fill with 1 cup of water, add salt and pepper to taste and wait until the rice is soft.
  8. Before it dries completely add the corn, the leek cut very small and, if you use it, the raisins and the chopped peanuts.
  9. Stir constantly so that the rice is loose and the flavors are integrated. Add the oregano.
  10. Serve this delicious Dominican Christmas rice while it is still hot, you can accompany it with a simple salad since it has many vegetables and its nutritional contribution is quite high.
