If you hate thorns, we offer you this tasty recipe: dogfish in green sauce. A simple preparation but high in nutrients and flavor. In addition, you do not need to remove scales and you will get few spines, since shark meat is pure cartilage. On the other hand, the green sauce is an ideal accompaniment to fish. And without a doubt the white wine gives the masterful touch to this sauce.

Ingredients to make Dogfish in green sauce:
- 8 slices of cazón
- 2 spring onions
- 2 garlic cloves
- 1 handful of parsley
- 1 tablespoon of flour
- 1 glass of white wine (Manzanilla, Rueda, Chacolí, etc.)
- 1 glass of water
- 1 pinch of salt (to taste)
- 4 tablespoons of extra virgin olive oil
- 1 bay leaf
- 1 pinch of pepper (to taste)
How to make Dogfish in green sauce:
- Clean the fish. Then introduce the wheels into a deep bowl, season with salt and pepper and reserve.
- Cut the chives into small squares. While parsley and garlic must be chopped more finely. Book separately.
- Inside a cauldron or frying pan, pour the olive oil and then the bay leaf. When the oil is hot add the garlic. Cook over medium heat and stir constantly.
- When you feel the aromatic smell of garlic, it’s time to add the chives. Add a pinch of salt to make it sweaty. Stir from time to time.
- When the chives look almost transparent, add the flour.
- Stir constantly until the flour looks golden.
- Add the wine and wait a minute, before adding the water. Season the green sauce and wait until it reduces. When the stewed dogfish sauce thickens, add the parsley.
- Next step, you put the dogfish in and cook for a minute on each side. Then, cover the pan with a lid and wait a couple of minutes.
- Serve the dogfish in green sauce accompanied by vegetables, salads, white rice, sautéed potatoes, French fries, boiled yucca, fried yucca, Morongo, or legumes, among others.
