Delicious Seafood Risotto Recipe

Ingredients to make Delicious Seafood Risotto:

  • 350 gr of Arborio rice
  • 1 onion
  • 1 liter of broth from cooking the mussels and clams
  • 600 grams of mussels
  • 30 gr grated Parmesan Regina cheese
  • 600 kg of clams
  • 1 green pepper
  • 1/2 leek
  • 1 clove garlic
  • 1 splash of white wine
  • Extra virgin olive oil
  • 2 butter spoons

How to make Delicious Seafood Risotto:

  1. We put the clams in salted water for at least an hour to loosen the sand.
  2. We clean the mussels well, put a little water and a splash of white wine in a casserole and steam and remove them as they open.
  3. We also open the clams.
  4. Remove the shells from the mussels and clams, add the cooking broths and strain them. Add water to complete 1 liter. We booked.
  5. Cut the onion and garlic into brunoised and fry with a little oil and a tablespoon of butter.
  6. When the onion and garlic are a little done, add the green pepper cut into slices.
  7. When it is transparent, add the rice and sauté well. We pour a splash of wine and wait for it to be absorbed.
  8. Add hot broth until it covers the rice and cook over medium heat.
  9. As the broth is absorbed, we add more and stir from time to time so that the starch is released.
  10. It will be ready in about 20 minutes.
  11. When al dente, add a tablespoon of butter, the cheese, the clams and the mussels. Stir well and let rest for about 2 minutes.
  12. Plate and decorate with a little chopped parsley and a few flakes of Parmesan.
