Delicious Four Cheese Ravioli Recipe

Ingredients to make Delicious Four Cheese Ravioli:

  • General
  • 3 tablespoons unsalted butter
  • wheat flour
  • chopped parsley
  • Pepper
  • salted
  • 1/2 kg of pasta for ravioli
  • for the filling
  • 2 tablespoons of mascarpone cheese
  • 2 tablespoons of ricotta cheese
  • 2 tablespoons grated mozzarella cheese
  • 6 teaspoons grated Parmesan cheese

How to make Delicious Four Cheese Ravioli:

  1. In a bowl, mix the ricotta cheese, mascarpone, mozzarella and 4 tablespoons of grated Parmesan cheese
  2. Cut the pasta dough in half (into two sheets).
  3. Cover one of them with a damp cloth.
  4. In the other, place the cheese mixture in little piles, leaving half a finger away from the edge. Cover it with the other pasta sheet.
  5. Starting at the edge, gently press around each mound to let the air out.
  6. Sprinkle with a bit of flour.
  7.  Using a fluted pasta wheel, cut along each side and between each mound to make small pasta shapes.
  8. Put the ravioli on a floured kitchen towel and sprinkle them with a little more flour.
  9. Let them dry.
  10. Once dry, boil them in plenty of salted water. Once you check that they are tender, drain them well. Place them on a hot plate.
  11. Melt the butter in a skillet over low heat; season it to taste.
  12. Pour over ravioli, add grated Parmesan cheese and chopped parsley.
