Ingredients to make curried mussels:
- 700 grams of mussels
- 150 gr of soft herb cheese
- 1/2 teaspoon curry powder
- 2 glasses of white wine
- 2 tablespoons of vinegar
- 1 glass of milk
- 10 grams of butter

- Lettuce
- Salt
- Pepper
How to make Curry Mussels:
- Turn on the oven at 200º C.
- Sauté the chopped shallots in butter, add a glass of wine and vinegar.
- Let it cook for 15 minutes.
- Wash the mussels, scrape them and open them in a covered saucepan.
- Remove the upper shell, separate the mollusks from the lower ones and put them on a plate.
- Wash the remaining shells and put them in the turned off oven.
- Heat the milk.
- Dissolve the cheese in it and throw it into the container with the snails, mixing it over a very low heat, stirring continuously.
- Season with salt, pepper, and a pinch of curry powder.
- Stir, turn off the heat and keep warm.
- In another saucepan, add the remaining curry with the wine and cook for 2 minutes.
- Remove from the heat and, 3 minutes later, add the mussels with the liquid they have released, well strained.
- Let stand for 5 minutes.
- Place the hot shells in a dish on the bed of washed and dried lettuce and put a mussel in each one.
- Drizzle with the hot sauce and serve immediately.
- For 4 people.
