Ingredients to make Cucumber Soup:
- For 4 people:
- 1250 grams of cucumber, half with skin and the other half without
- 25 grams of butter
- 1 sprig of mint
- 2 tablespoons of wheat semolina
- 1 medium onion
- 1/2 liter of milk
- 1/2 liter of water
- 1/2 cup of liquid cream
- Salt
How to make cucumber soup:
- Sauté the onion in small pieces in the butter until softened.
- Add the diced cucumbers.
- Add milk and water, stir.
- Add the semolina, salt, pepper and mint.
- Cover the pan and cook for three quarters of an hour.
- Finally, pour half a cup of cream and a dash of vinegar.
- Stir, let boil a couple of minutes and let cool.
- It is eaten cold.
