Cucumber Soup Recipe

Ingredients to make Cucumber Soup:

  • For 4 people:
  • 1250 grams of cucumber, half with skin and the other half without
  • 25 grams of butter
  • 1 sprig of mint
  • 2 tablespoons of wheat semolina
  • 1 medium onion
  • 1/2 liter of milk
  • 1/2 liter of water
  • 1/2 cup of liquid cream
  • Salt

How to make cucumber soup:

  1. Sauté the onion in small pieces in the butter until softened.
  2. Add the diced cucumbers.
  3. Add milk and water, stir.
  4. Add the semolina, salt, pepper and mint.
  5. Cover the pan and cook for three quarters of an hour.
  6. Finally, pour half a cup of cream and a dash of vinegar.
  7. Stir, let boil a couple of minutes and let cool.
  8. It is eaten cold.
