Cucumber salad with grated carrot recipe

We learn to prepare a purifying salad, also called detox, which will help us to compensate for the excesses committed at Christmas, or other festivities, and will facilitate the elimination of accumulated liquids in our body. It will take very little time to prepare it, and although the cucumber is in season in summer, it is possible to find it all year round in greengrocers, so we can make it any day of the year. It is a light dinner if we eat it alone, but we can also prepare it to accompany other dishes and make a more complete menu.

Ingredients to make Cucumber Salad with Grated Carrot:

  • 2 cucumbers
  • 1 carrot
  • 1 Burgos type fresh cheese
  • 1 can of mackerel in oil
  • 90 grams of pitted black olives
  • 90 grams of pickled purple onions
  • 1 handful of peeled sunflower seeds for salad
  • 1 splash of olive oil
  • 1 pinch of salt
  • 1 pinch of minced garlic

How to make Cucumber Salad with Grated Carrot:

Peel the cucumbers and cut them into slices to start preparing the detox salad. We put them in a large bowl. Peel the carrot, grate it and put it with the cucumber.

Drain the olives and onions in vinegar and add them to the salad bowl with the previous ingredients. Drain the oil from the mackerel, cut it into pieces and add it to the detox cucumber salad. Drain the cheese and cut it into cubes. We reserve it for a moment. We put a handful of sunflower seeds on the cucumber and grated carrot salad.

Season with oil, salt and a little garlic and mix well. Next, add the cheese and mix carefully so as not to destroy it. And ready to serve!

This cucumber salad with grated carrot is perfect for cleansing the body. As we have already mentioned, we can serve it as a single dish or as an accompaniment to another. Of course, to continue in line with detox recipes, we recommend using low-calorie and purifying dishes, such as grilled chicken with lemon.
