Cucumber and Smoked Salmon Rolls Recipe

Cucumber is a low-calorie vegetable. However, it has beneficial effects for the body and is a widely used ingredient in the cuisine of various countries around the world.

Its composition is mainly made up of water, which makes it a recommended food for people who want to lose weight. It has vitamin C and E, both with antioxidant properties. It is rich in potassium and especially in sodium, a combination that gives it a diuretic effect.

The best time for this vegetable is between the months of June to September. It can be consumed raw, preferably in rolls, salads, gazpachos and salmorejos. For this reason, on this occasion I share some cucumber rolls stuffed with smoked salmon accompanied by a delicious vinaigrette with which to delight everyone.

Ingredients to make Cucumber and Smoked Salmon Rolls:

  • 2 Cucumbers
  • 300 grams of smoked salmon
  • 2 Eggs
  • 1 spring onion
  • 1 tablespoon of Capers
  • 4 pickled cucumbers
  • 4 tablespoons of olive oil
  • 1 tablespoon of rice vinegar
  • 1 can of bell pepper
  • 1 pinch of ground black pepper
  • 1 pinch of salt
  • 3 sprigs of fresh basil

How to make Cucumber and Smoked Salmon Rolls:

We begin to prepare these cucumber and salmon rolls by cutting the smoked salmon into small pieces on a plate.

We boil the eggs for 10 minutes, cool them under cold tap water, peel them, break them into small pieces and put them in a bowl.

We clean the onion, chop it finely and put it in the bowl where the eggs are. Add the capers and pickles, well drained and cut into small pieces.

Wash several basil leaves, dry them, chop well and add them to the mixture. Add the smoked salmon to this mixture, season with salt and pepper and mix everything well.

Wash the cucumbers, dry them and cut them into longitudinal slices with the help of a mandolin. Place a spoonful of the smoked salmon tartar mixture on a cucumber slice and then roll it up. Repeat the process until you finish with all the mixture. In a jar, put the rice vinegar, olive oil, a teaspoon of chopped gherkins and capers, a tablespoon of chopped fresh basil, salt and pepper, cover the jar and shake to mix everything well. We serve the cucumber and smoked salmon rolls seasoned with the vinaigrette.
