Cucumber and olive salad recipe

Cucumber salads are not just for summer, although many only want them when it’s hot.  They are an ideal companion for light dishes and also a very healthy option for dinner or lunch if you eat away from home.

On this occasion, we prepare a refreshing cucumber and olive salad to take advantage of the last hours of summer.

Ingredients to make Cucumber and Olive Salad:

  • 1 Cucumber
  • 1 green apple
  • 1 can of corn
  • 1 can of mackerel or tuna in oil
  • 1 handful of sultanas
  • 1 can of pitted green olives
  • 1 splash of extra virgin olive oil
  • 1 splash of Vinegar
  • 1 pinch of salt

How to make Cucumber and Olive Salad:

To start preparing this cucumber and olive salad, first we peel the cucumber, cut it into slices and put it in a salad bowl.

At the same time we wash the apple, remove the tail and the heart and cut it into small squares. We add it to the salad bowl. Next, we drain the corn, olives and mackerel or tuna.  We crumble the latter a little and add all the ingredients to our bowl.

Finally, we add a handful of raisins and season with salt, oil and vinegar. We stir well so that all the ingredients of the apple and tuna salad take the dressing and mix and serve.
