Ingredients to make Cuban-style Chicken Croquettes:

  • 180 grams of Chicken
  • 30 milliliters of dry wine
  • 1 unit of Onion
  • 2 tablespoons of Butter
  • 3 tablespoons of flour
  • 350 milliliters of milk
  • 1 pinch of salt
  • 1 pinch of ground black pepper
  • 1 pinch of Nutmeg
  • For the batter
  • 100 grams of flour
  • 100 grams of breadcrumbs
  • 2 units of Egg
  • to fry
  • 300 milliliters of sunflower oil

How to make Cuban Style Chicken Croquettes:

1 To prepare the Cuban-style chicken croquettes, we gather all the ingredients.

2 Sauté the onion with the melted butter in a pan until transparent.

3 Add the shredded cooked chicken and cook for 3 minutes. We have used a thigh from a chicken soup, but you can use any piece of chicken you have at home.

4 Add the dry wine and let the alcohol evaporate by cooking for a couple of minutes.

5 Next, add the flour and stir well so that it mixes with the sofrito. We cook for 1 minute. At this point, the process is very similar to that of typical Spanish croquets.

6 To finish the dough, add the milk little by little without stopping stirring. Add a pinch of pepper, salt, nutmeg and stir until the dough comes off the pan. If it is too runny we can add more flour.

7 Once the dough for the Cuban-style chicken croquettes is made, spread it out on a flat plate or tray and let it cool in the fridge for at least 1 hour.

8 After this time, when the dough is cold and compact, it is time to shape the croquettes with the help of two spoons.

9 Coat the chicken croquettes by passing them through flour, beaten egg and breadcrumbs.

10 We fry the Cuban-style chicken croquettes in plenty of sunflower oil at high temperature.
