Ingredients to make Cuban rice with banana:

  • ½ cup of rice
  • 1 cup of water (240 milliliters)
  • 1 egg
  • ½ banana
  • 2 tomatoes
  • 1 clove garlic
  • 1 onion
  • 4 parsley leaves
  • 1 splash of olive oil

How to make Cuban rice with banana:

  1. To make the Cuban rice with banana, we put the water with plenty of salt and a tablespoon of oil. Add the rice and cook, stirring constantly, for 15 minutes until the grain is al dente (doneness of rice depends on the grain used).
  2. Peel the plantains and cut them to taste, either in slices or lengthwise. In another pan, with a little oil over medium heat, fry the plantain. Remove and place on absorbent paper.
  3. In a skillet over low heat, with oil, cook a whole egg for 3 minutes covered. Add a little salt.
  4. To make the sauce for the rice with egg and banana, chop the tomato into small squares, the onion and the garlic. Cook over medium heat until the consistency of sauce is obtained, season with salt and pepper. If necessary, you can add a little sugar to regulate the acidity of the tomato in the rice with egg and slices.
